Electric knife sharpener - question and answers

Hi Andrew

Thank you for your advice on knife sharpening.

I have a large collection of Global knives (all purchased from you) as well as a Chefs Choice Electric Sharpener (at your recommendation)

We really only keep them for people who don’t think anything else will work which, as you’ve probably gathered, is not really my opinion. However if I or one of my merry band have recommended the wrong product for you that is easily remedied.

Could you give me some advice on:   

1.   How often to use it per knife.

Andrew's comment: As soon as the wow factor goes.

2.    When should I use both sides.

Andrew's comment: On all the knives that are double sided which will be most of them I imagine.

3.       Do you do demonstrations/lessons on this electric sharpener.

Andrew's comment: No not yet but the response to this email has been quite strong so maybe we will. You can be sure I’ll let you know when we do.

As you can see,  I am not confident that my knives are as good as they should be!
