I'm very sorry to hear of your problems with your GreenPan.

Before I attempt to dispense any advice would you tell me:
1. which model you have and its size.
2. Is the oil collecting on one side or all around in a ring?
3. What heat source do you use?
4. Does everything stick or just certain foods?

Lastly I want to reassure you if having looked at all the possibilities you are still unhappy with the pan them we will take it back and give
you a refund.

Dear Andrew, thank you for the reply.

1. It looks like the Vienna Frypan 28cmH/Ano. Induction Ref: 36539
2. The oil does collect around the outside. Like it is slightly raised in the middle.
3. Gas. We have never over-heated.
4. All foods - you would not even think of doing an omelette on it!

Thanks for your reply. I think we’d probably better just take it back and give you a refund or change it for an alternative product in which case I’d suggest you had a word with Babette and she’ll be able to guide you towards the most suitable pan for you.

The reasons that I appear to be giving up almost before we’ve even started are these.

Vienna is currently the best range and my personal favourite
The oil collecting round the outside is a fault which I’ve seen once before so your pan needs to go back to GreenPan anyway
Gas is really (induction aside ) the best heat source and most controllable so you’re unlikely to be getting problems here (although note my comments later on)
With all foods catching there’s either a fault with the non stick (very unlikely. but we could let you have a replacement if you wished?) or you are in fact using too high a temperature (remember most of us do). You mention omelets. In our Vienna 28cm I’ve regularly done a simple cheese and fresh basil omelet time and time again and it always tastes fantastic, modesty aside, and always comes out without problem. Fried eggs on the other hand I do have a problem with in these pans!

In conclusion I’d say that you have two unrelated problems with your GreenPan. Firstly the faulty “body” with a concave base and secondly either a fault with the coating (possible if unlikely) or you are using too much heat and the latter is in some senses the Achilles heal of these pans because although the heat won’t destroy the coating, unlike all other plastic based non sticks, it will however stick earlier on in the cooking process. Compare this scenario with one of my other favourite frying pans from SKK and you would have a very different story but at approximately twice the price.

So have a think about what I’ve said and let me know what you want us to do, refund , replace, find an alternative or give Babette or I a ring to discuss further.
